This week has been crazy with Hubby out of town and Mommy in her 3rd trimester, I have felt abit like a crazed lady that is losing her mind. Admittedly, I may have said yes to a few too many October things in light of our November bundle of joy. So here I am, as I often am, mastering the act of juggling family, work and other committments. So tonight I had a meeting, hubby was flying back in from a work trip and I felt the overwhelming need to provide dinner for my family before I tried to race off for my other obligations. A quick google search provided a fun answer.
Liam loves fried chicken legs lately, it’s a new “thing”. It is something he can eat himself and as a boy it is more appealing because he can eat is straight off the bone. Don’t get me started on the grossness of watching this take place… as someone that refuses to eat anything off the bone. Tonight it is baked chicken drumettes. Hubby will be happy because it’s pretty close to wings and I feel okay because they are baked and Litlle Man will just enjoy eating tiny chicken legs. Yeah, score, win all the way around…. which happens less that I wished.
Here is a link to the recipe I found at Delish.com:http://www.delish.com/recipefinder/brown-sugar-barbecue-chicken-drumettes-recipe-mslo0712. I figure I can serve with a little corn (microwavable of course tonight) and baked sweet potato and I can feel good that even though it is quick, I have provided a relatively healthy meal for my family. Bon Apetit!
